Instructions

Preheat the oven to 350°F.

Start by preparing the pico de gallo. For this, wash the tomatoes and dice into small cubes. Also finely dice the onion, and finely chop the cilantro. Add all of these ingredients into a bowl: the tomato, onion, and cilantro. Squeeze half a lime (or lemon if you don't have lime) and pour on top of the ingredients. Add a pinch of salt, and if you'd like, some spice. Mix well and set aside.

Cut the avocado into cubes.

Place the tortilla chips onto an oven safe plate or tray. Add the black beans or pre-cooked beans, and the grated cheese on top. Place in the oven for 6 minutes at 350°F.

After this time, remove from the oven and add the pico de gallo and avocado on top.

Tips & Tricks

Use any type of grated cheese that you have in your fridge: cheddar, mozzarella, etc. And if you're vegan, use a vegan cheese.

If your tomato is very large, just 1 will suffice.

Although nachos are usually paired with sour cream, using a yogurt cream is healthier. It's very easy to make. Add a plain yogurt, juice from 1/2 lime, 1/2 teaspoon salt, and a pinch of pepper into a bowl and mix. As simple as that!
