Bean and Red Bell Pepper Enchiladas

Preheat the oven to 400°F.

Using a food processor, chop the onion and bell pepper. Then, in a wide pan, add olive oil and sauté the vegetables you have just chopped over medium heat.

When the vegetables are tender add the pre-cooked beans to the pan along with the corn. Cook for several minutes.

Add some tomato sauce to the pan to add flavor and juiciness to the filling. Let the ingredients simmer for several minutes over low heat and then turn off the heat.

Fill each tortilla with the filling you have just made.

Prepare your oven safe dish by adding a layer of tomato sauce to it. Next, place the tortillas you have just filled. Finish off each layer of tortilla and filling by adding a little bit of tomato sauce and shredded cheese (you can opt for vegan cheese if you're on a vegan diet). Place the dish into the oven and bake for approximately 15 minutes or until the cheese has melted and is a golden brown color.

Once it is finished, remove the dish from the oven and sprinkle some chopped cilantro on top before serving.
