Noodles with Tofu and Broccoli

Start by preparing the ingredients. Wash and cut the mushrooms into slices or small pieces, as desired. Cut the onion into strips. Remove the tofu from its package, drain, and cut into small cubes. Wash and cut the broccoli into smallish florets.

Heat a little olive oil in a pan and lightly fry the onion and mushrooms over medium heat for 3–4 minutes, stirring often.

Add the tofu and stir-fry for 1 minute.

Then pour in the coconut milk and season with the curry powder and a little salt. Stir and cook over medium heat for 5 minutes. When the coconut milk comes to a boil, reduce the heat to low and simmer for 10 minutes. Add the broccoli and continue to simmer for 4 more minutes.

Finally, add the rice noodles to the pan. They should take 3 minutes to cook in the sauce. Then stir everything and cook for 1 more minute.

Serve immediately.
Tips & Tricks
We added a handful of peanuts to the dish.
Feel free to use cumin instead of curry. It’s a delicious alternative.
