Instructions

Add the flour, eggs, milk, and a pinch of salt to the blender. Blend well and let the crepe batter stand while you prepare the filling.

Place the chicken on a cutting board, cut it into cubes, and add a pinch of salt. Add a little olive oil to a skillet and cook the chicken until it's golden brown. Once cooked, mince or shred the chicken and set aside.

Wash the mushrooms and either chop or thinly slice them. Chop the garlic.

Add a little more olive oil to the skillet and once it's hot, add the garlic and mushrooms. Add a little salt and sauté until they are cooked. Add the chicken to the skillet that you had set aside and mix the ingredients. Turn off the heat and set aside.

Place a small amount of butter into a medium size pan. Pour some of the batter into the pan and move the pan around in a tilted circular motion to cover with the batter. Cook over medium heat for 1-2 minutes (until bubbles begin to form at the top). Carefully flip it over.

Add some of the chicken mixture to the crepe followed by some cheese and let it melt. Begin to close the crepe little by little. Repeat these steps until the batter runs out.

If you've made crepes in the past, flipping them might come easy to you. If it's your first time, don't worry! It takes patience and a couple of tries to get it right. The trick is to make sure the first side is cooked enough before flipping. When you spread the batter in the pan you must leave it for a couple of minutes until you see that it has cooked. You will know it's cooked when bubbles begin to form at the top and when you try to flip it, the batter is firm. If you feel that the batter is too soft and it is breaking, leave it for several more seconds until it becomes more firm.
