Pork Sirloin in Mushroom and Onion Sauce

Cut the pork sirloin into medallions, add some salt and pepper, and cook both sides in a hot pan with oil. Once cooked thoroughly, set aside.

Slice the mushrooms and onion.

Add olive oil to another pan and lightly fry the mushrooms on medium heat until golden. It'll take around 5 minutes. Remove and set aside.

Use the same pan and add some more olive oil to cook the grated garlic and the onion on medium-low heat. After 6-7 minutes, when the onion is tender, add the mushrooms you've set aside and mix.

Add the mustard and tomato and mix. Add the cream, the broth and cook on low heat until the sauce thickens.

Once the sauce has thickened to your liking, add the pork and mix with the sauce.

Serve in a bowl accompanied by mashed potatoes, rice, couscous, or anything else you would like to serve with.
