Garlic and Lemon Potatoes

Instructions

Wash the potatoes. Cut into medium-large pieces and boil them in a pan with water and a pinch of salt. They should cook in 15 minutes. Prick with a fork to check they are soft. Drain.

Put some oil into a skillet over medium heat. When hot, add the potatoes and stir often to color on all sides.

Mince the garlic and add to the skillet with the potatoes. Cook together for 1 minute more. When the garlic starts to color, add 3 tablespoons lemon juice, 1 teaspoon grated lemon zest, and salt and pepper to season. Reduce the heat and continue to fry. When you see the potatoes are just right, serve directly from the pan.
Tips & Tricks
When you boil the potatoes, make sure not to overcook them. They have to be soft, but they mustn't fall apart.
If you have parsley, mince a handful and sprinkle on the potatoes before serving.
