Pork with Pineapple Sauce

Slice the garlic cloves. Add some oil to a large pan and fry the garlic. After several minutes add the rice and cook for a minute. Add the water and a teaspoon of salt and cook on high for 6-7 minutes. Afterwards, lower the heat and cook on low for 10-12 more minutes. If in this time the rice has absorbed the water and is still hard, add some more water. Let it stand for a bit.

Cut the pineapple into small cubes. Heat up a pan and add the pineapple. Cook on low heat for approximately 15 minutes. After this time add the pineapple to a blender and add 1/4 cup of water and blend well. Set aside this pineapple puree.

Cut the pork into medium size dice and add some salt and pepper. Add some oil to another pan and heat it up. Once hot add the pork and cook for 5 minutes. Next, remove from the pan and place on a plate and set aside.

Finely dice an onion and the rest of the garlic cloves. Cook these two in the same pan used to cook the meat. Cook for 2-3 minutes.

Add the pineapple puree to the pan along with the rice vinegar, and soy sauce (you can also add a tablespoon of oyster sauce as an option). Mix and add the pork that was set aside along with half a cup of water. Cook on high heat for several minutes and when the sauce begins to boil, lower the heat to low and cook for 15 minutes or until the sauce is to your desired thickness.

Serve on a plate with rice.
