Chicken and Cucumber Pasta Salad

Instructions

Add water to a pot with a pinch of salt, and cook the pasta for the time indicated on the package. Once cooked, drain in a colander and set aside.

Wash the cherry tomatoes and cut in half. Wash and finely chop the cucumber.

Cut the chicken breast into medium size cubes. Add some olive oil to a pan and cook the chicken with a touch of salt. Once the chicken is golden brown, turn off the heat and set aside.

Add the pasta to a bowl. Add the cherry tomatoes, cucumber, chicken, and fresh cheese. Mix well.

Add 3-4 tablespoons of olive oil, juice from 1/2 lemon, and some salt into another bowl and mix.

Dress the salad with the dressing you've just made and serve.
Tips & Tricks
We used cottage cheese in this recipe. You can use mozzarella, fetta, ricotta, or other types of fresh cheese.
If you don't have cherry tomatoes, normal tomatoes work well.
