Instructions

Wash the quinoa with a lot of water 3 times. Drain and place in a deep pot. Place the pot on the stove and add 3 cups of water and a pinch of salt. Cook the quinoa for 15 minutes. Remove from the fire and remove the excess water. Set aside.

Wash the vegetables. Slice the onion, mushroom, and bell pepper into big strips.

Place a wok on the stove and add some oil. Once hot add the onion and bell pepper and cook for 5 minutes.

Add the cooked quinoa and the mushrooms and cook for 2-3 more minutes.

Incorporate the soy sauce, vinegar, ground cumin, black pepper, and salt. Add the chopped parsley and cook everything well.

Warm several tortillas on a griddle or large pan, flipping them and warming both sides well for several minutes each.

Serve the vegetable sauté to the tacos and add some lemon juice on top.
