Combine 1 cup water with a little salt and olive oil in a pan and place over the heat. When the water comes to a boil, add the cup of couscous and turn off the heat. Let stand until the couscous absorbs the liquid.

Wash and dice the zucchini. Peel and slice the carrot into thin rounds. Coarsely chop the onion. Heat a little olive oil in a skillet and lightly fry the vegetables over medium heat for 8–10 minutes, stirring often, until soft. Season with a pinch of salt. Transfer to a bowl and set aside.

Put a little more olive oil into the same skillet and cook the salmon fillets. Season with a little salt.

Now it’s time to assemble the bowl. Start with the couscous, then add the sautéed vegetables, and top with the salmon fillets. You can cut them into smaller pieces if you prefer. That’s all there is to it!
Tips & Tricks
You can use soy sauce instead of salt for more depth of flavor.
