Salmon with Cauliflower Rice and Vegetables

Wash the cauliflower and cut into pieces. Once it's cut, chop it in a food processor or with a knife, although a knife will take a bit longer. The cauliflower should resemble rice or breadcrumbs.

Prepare the rest of the vegetables. Wash the spinach and cut them if they are too big. Wash and chop the mushrooms and slice the onion.

Pour 1 tablespoon of oil into a pan and when it's hot add the onion and mushrooms and cook over medium heat for several minutes.

After this time add the cauliflower crumbs and the soy sauce and sauté with the other vegetables for 5 minutes.

Add the cut spinach and cook for about 3-4 more minutes. Check and adjust the saltiness, adding more soy sauce if necessary. Set aside.

Clean the same pan used before if necessary and add a drizzle of olive oil. Cook the salmon filets to your liking and add a pinch of salt and pepper.

Serve the salmon on a plate and accompany it with the cauliflower rice with vegetables.
