Salmon with Couscous and Vegetables

Instructions

Pour one cup of water and some salt into a pot and bring to a boil. Once boiling add the cup of couscous and turn off the heat. Let it stand until it hydrates.

Wash the zucchini and chop it. Thinly slice the pumpkin and mince the garlic. Add some olive oil to a pan or skillet along with a pinch of salt and sauté the vegetables over medium heat for 8-10 minutes until tender. Once cooked, remove from the pan.

Add a little more oil to the same pan or skillet and cook the salmon fillets. Add salt.

Add the couscous to a bowl followed by the vegetables you set aside and finish with the salmon fillets on top.
Tips & Tricks
You can add chopped cilantro on top of the salmon when plating.
Cook the salmon in the oven, if you prefer, instead of the stovetop.
