Instructions

Preheat the oven to 400°F.

Mince the onion.

Heat a little olive oil in a skillet. Add the onion and lightly fry for a couple of minutes, stirring often.

When the onion is soft, add the spinach and pinch of salt. Fry for just a couple of minutes.

In a bowl, combine the cooked spinach and onion, the beaten eggs, and the cheese. Use a spoon to mix well.

Lightly grease a muffin tin and pour in the batter. Bake in the oven for about 20 minutes, or until a toothpick inserted into the center comes out clean.
