Scrambled Eggs with Onion and Corn

Mince the onion.

Heat a little oil in a skillet and add lightly fry the onion until it colors, stirring often. When tender, add the corn and fry for a few seconds.

In the meantime, beat the eggs with a pinch of salt in a bowl.

Then quickly pour the beaten eggs into the skillet and cook together with the onion and corn. Use a wooden spoon to break up and stir the eggs and to make sure they don’t stick. Now they're ready to enjoy!
Tips & Tricks
You can finish by sprinkling with a handful of your favorite herbs. We added minced cilantro.
