Wash and chop up the leek and mushrooms.

With a few pulses in a food processor (or a knife if you don’t have one), chop the tofu into tiny pieces.

Heat a little olive oil in a skillet. Then add the leek and mushrooms and cook for 8–10 minutes, stirring often.

Next, add the tofu and season with a little salt. Cook together, stirring regularly, for 2–3 minutes.

Serve on a plate. Enjoy!

You can use soy sauce instead of salt.
