Cut the onion into thin strips and then chop the red bell pepper into small cubes.

In an oven safe pan add some olive oil and place on the stove. When it becomes hot lightly fry the onion and bell pepper on medium heat. After 5 minutes add the spinach and cook. With the heat it'll start to reduce in volume.

Beat the eggs with a pinch of salt.

Add the beaten eggs to the pan, spread it out by moving the pan and then remove from the stove.

Crumble some goat cheese on top and place in the oven. Bake at 400°F for 10 minutes. The egg will surely be cooked thoroughly during this time, so you can remove it from the oven and serve hot.
