Finely chop the onion and tomato and start cooking the onion for 5 minutes.

Add the tomato and cook for another 5 minutes.

Break the eggs into the pan and add the salt. Cook for several minutes, stirring constantly, until it begins to cook.

Add the mozzarella and stir for several more seconds until the egg is fully cooked.

You can add some basil or oregano to the scramble to make it even tastier.
