Avocado and Mozzarella Stuffed Omelet

Beat 2 eggs in a small bowl with a pinch of salt.

Heat up some oil in a pan and add the beaten eggs. Cook for several minutes on one side. Once cooked enough, flip the egg and cook on the other side until it's cooked all the way through.

Transfer the egg onto a plate and do the same for the other 2 eggs.

Chop the avocado, cherry tomatoes, and mozzarella and place them on half of the omelet. Add the oregano and cover the half with the filling with the other side of the omelet (it will look like a taco). You can finish by sprinkling some chopped parsley on top.
Tips & Tricks
You can substitute the mozzarella for other cheeses like cottage cheese.
