Chop the asparagus and set aside.

Chop the onion and carrot into small cubes and cook in a pan with some oil for about 10 minutes.

In the final minutes, add the asparagus and cook for 2-3 more minutes until they become an intense green.

In a small bowl beat the eggs and mix with the cooked vegetables and a bit of salt.

Add the egg mixture to a pan and let it cook for several minutes on one side before flipping it. Once flipped let it cook through the other side as well.
Tips & Tricks
Add your favorite vegetables to the omelet to give more variety to the flavor.
You can make a large omelet or two smaller ones. If it is a large one, it will take a bit longer to cook thoroughly.
