Spinach Crepes with Cheese and Ham

Grind the oatmeal to the consistency of flour in a food processor, making sure there are no remaining clumps of unground oatmeal.

Add the egg, milk, and salt, and blend until smooth. The batter will be runny.

Drizzle a little oil in a skillet to cover the entire base. Spread a little of the batter inside the skillet. Tilt from side to side to cover well and then cook over medium heat for 1–2 minutes. Then carefully turn the crepe over.

Now place a slice of ham and a slice of cheese on top. Wait until the cheese melts and the ham heats up before very gradually rolling up the crepe. Repeat the process until there is no more batter or filling left.
Tips & Tricks
If your ham and cheese slices are small you can add another one if you deem it necessary.
You can use whichever variety of flour you'd like and use lactose-free cheese if needed.
With the quantities listed you can make 4 large crepes.
