In a medium sized bowl, combine the drained tuna, mayonnaise, mustard (we used honey mustard), diced celery, and the juice of 1/2 lemon.

Set the tuna mixture aside and prepare the other sandwich fillings.

Distribute the tuna mixture into 2 servings and place inside of each sandwich.

Top the tuna with shredded cheese and fresh spinach for each sandwich.
Tips & Tricks
We used light mayonnaise and honey mustard in the recipe.
Make this your own by customizing the bread or swapping the spinach for any other fresh leafy green.
The tuna mixture can also be made ahead of time and kept in the fridge for easy meal prep.
You can use whole wheat pita pockets, tortilla wraps, or slices of bread for each sandwich.
