Tofu Scrambled with Zucchini

Wash and cut the onion and zucchini into small dice.

With a few pulses in a food processor (or a knife if you don’t have one), chop the tofu into tiny pieces.

Heat a little olive oil in a skillet. Then add the onion and zucchini and lightly fry for 6- 8 minutes, stirring often.

Next, add the tofu and season with a little salt. Cook together, stirring regularly for 2–3 minutes.
Tips & Tricks
You can use soy sauce instead of salt.
