Vegetable Omelet Quesadillas

Instructions

Thinly slice all the vegetables.

Use a pan that is the same diameter of the tortilla. Add some olive oil to it. Once it's hot add the onion, bell pepper, mushrooms, and zucchini. Cook for approximately 8 minutes. Add some salt and pepper to the vegetables.

Beat the eggs in a bowl.

Once the vegetables are cooked you can add them to the bowl with the beaten eggs and mix.

Use the same pan from before and add half of the omelet mixture and cook the omelet. Once you see that the egg has cooked on the bottom you can add the tortilla on top to cover it and leave it on the stove for a bit longer. Carefully flip it so that the tortilla is on the bottom and touching the pan.

If you would like you can add some cheese on top and after 30 seconds you can fold in half. Carefully flip it over and leave it on the other half for several seconds or serve immediately.

Repeat the steps for the other quesadilla.
