Instructions

Wash and cut the zucchini into long and thin slices. You can use a mandoline slicer if you have one, or use a knife, but be very careful. Arrange the strips on a serving dish.

Crumble the goat cheese and scatter together with 2 handfuls of nuts over the zucchini strips.

Squeeze the juice of half a lemon and sprinkle over the salad. Also season with salt and pepper and drizzle with olive oil. Let the flavor infuse for about 5 minutes and enjoy! You’re going to love it.
