Wash, dry, and cut the spinach into pieces of the desired size.

Wash and cut the zucchini lengthwise into thin slices using a mandoline slicer.

Heat a little olive oil into a large skillet and lightly fry each zucchini slice separately. Season with a small sprinkling of salt.

In the same skillet, toast the sesame and sunflower seeds for 1 minute.

Put the spinach and zucchini into a bowl. Crumble the goat cheese and scatter over the salad together with the seeds.
Tips & Tricks
Season the salad with oil, a splash of lemon juice, and salt. Or if you prefer a more traditional dressing, olive oil, vinegar, and salt is just perfect.
You can make this a vegan recipe by using plant-based cheese instead of goat cheese, or just leaving the cheese out altogether and enjoying the other delicious ingredients.
