Meanwhile, wash the zucchini and grate using a mandoline or a grater with large holes. Add a pinch of salt and set them aside while the potatoes cook.

When the potatoes are ready, drain and let them cool a bit before peeling. Mash them well, grate them, or pass them through a food processor. Drain the excess water from the zucchini by pressing them by hand and then mix with the potato. Add some more salt, pepper, and if you like, another herb or spice of your choice.

Start gathering bits of mixture and give them a tater tot shape (cylinder). Place them on a tray lined with parchment paper and when they're already on the tray place them in the oven. Bake for 30 minutes, giving them a turn halfway through the baking time.
Tips & Tricks
If you would like to reduce the potato cooking time, you can cut them into smaller pieces. But take into account that these smaller pieces will lose some flavor. Also keep in mind that if you use a lot of water, it will take longer to boil, so don't add too much.
