Clean the anchovies. Remove the head, the innards, wash, and dry very well. Add some salt on top.

Toss each in flour and fry them individually (or at the same time without touching but in segments depending on size of the anchovy and pan). Fry for several minutes until golden.

Once they're done frying, place on a plate lined with parchment paper so it absorbs the excess oil.
