
Apple and Peanut Butter Tartlets

Preheat the oven to 350°F.

Add the oats, dates, peanut butter, coconut oil, and cinnamon to a food processor and blend until you have a sandy consistency.

Slowly add the water until you have a shapeable consistency.

Place the dough into the muffin molds (more or less a tablespoon per mold) and press using your fingers so that it covers the base and stays compact. Press some of the dough onto the sides of the mold to form walls, giving it a little basket shape.

Chop the apple and fill the tartlets. Sprinkle some cinnamon on top and decorate with blueberries.

Bake for 40 minutes.
Tips & Tricks
We used medjool dates which are meatier, sweeter, and perfect for this recipe.
You can fill the tartlets with your choice of fruits if you would like.
