Asian-Style Fish in Curry

Instructions

Cut the fish into medium sized pieces. Take care to remove all of the bones. Add some salt and pepper.

Drizzle some oil into a pan and once it's hot, cook the fish on both sides. Once it's cooked, set aside.

Peel the carrots and cut into thin strips. Slice the onion, garlic, and ginger.

Use the same pan you used to cook the fish, add more oil and cook the vegetables. Cook on medium-low heat for 8-10 minutes, until tender. Once tender add the curry and coconut milk, stir and then add some salt. Cook for several minutes.

Add the fish to the pan and mix with the sauce and vegetables. Cook until the sauce thickens to your liking. Serve with rice.
