Bean, Eggplant, and Zucchini Burrito

Instructions

Cut the onion, zucchini, and eggplant into medium size cubes. Next, add some olive oil to a pan and fry the vegetables you have just cut on medium heat.

After 5 minutes add the finely diced tomatoes and cook for several minutes.

Next, add the cooked beans, corn, ground cumin, and some salt and cook for a couple minutes.

Add a bit of tomato sauce to the pan so that the filling is saucier. Let the ingredients in the pan cook for several more minutes on low heat and then turn off. Fill each tortilla with the filling you've just prepared.
Tips & Tricks
You can finish by adding a handful of grated cheese and chopped cilantro on top of each burrito.
