Wash and thinly slice the lettuce.

Cut the onion and tomato into small cubes.

In a bowl or container add the beans, the chopped onion and tomato, the drained corn and the sliced lettuce.

Gently mix, and if you'd like, add the suggested dressing from tips and tricks. Give it another mix and enjoy!
Tips & Tricks
For the dressing: in a bowl, mix plain unsweetened yogurt (or your favorite plain plant-based yogurt), one avocado, a small finely chopped clove of garlic, a pinch of salt, a splash of lemon juice, and a generous amount of cilantro. Blend well in the blender and you're finished!
You can serve the salad with toasted slices of tortilla.
In the recipe we use already cooked black beans. If you don't have any, you will need to let some soak in water overnight and cook them with a generous amount of water, some salt, and a bit of onion the day you make your recipe.
