Chicken and Red Bell Pepper Crepes

Instructions

Chop the chicken and add some salt. Cut the onion and the bell pepper into strips.

Add some oil to a pan and sauté for 4-5 minutes.

Mix the oat flour, egg, half a teaspoon of salt, and the milk in a bowl and mix well until you get a nice batter.

Add some drops of oil in a pan and spread it around the pan. Add some of the mixture and tilt the pan around so the batter spreads and coats the whole pan. Cook for 1-2 minutes. Flip carefully to cook the other side.

Add some of the chicken and bell pepper sauté you have just prepared to the crepe followed by a handful of grated cheese. Allow the cheese to melt and slowly begin to close the crepe in half. Repeat these steps as many times as you can until the batter and mixture runs out.
Tips & Tricks
If you don't have oat flour you can make your own by grinding 7/8 cup of rolled oats.
As the time passes the batter will slowly thicken. Because of the batter thickening, the first crepes will be easy to spread around the pan, but later it will cost you a little more. In order to fix this, you can mix the batter a little in the batter.
