Instructions

Preheat the oven to 390ºF for 10 minutes. Cut the sweet potato into small cubes and place them spread out on an oven safe dish with a touch of salt, olive oil and cumin. Cook until soft, around 25 minutes.

While the sweet potatoes are cooking, cook your chicken on a skillet or pan with some salt and oil. When it is ready you can slice it, dice it or pull it apart.

Slice the peppers and wash and cut the spinach into small pieces.

Prepare the burrito: spread a tablespoon of hummus on the center of each tortilla, add the chicken, sweet potato, pepper and spinach. Close or roll the tortilla, and enjoy!

Tips & Tricks

You can use veggies that you already have, or ones that are about to expire.

If you prefer to cook the peppers you can sauté them with the chicken, or if you're up to it, you can use roasted peppers. To make roasted peppers, start by slicing them and putting them in the oven with the sweet potato.

Roast 2 or 3 sweet potatoes at the same time so you can have them ready for other dishes during the week.

If you don't have any spinach or don't like them, you can try using fresh kale or lettuce instead.
