Instructions

Wash the cauliflower and pulse in a food processor until it resembles rice grains. If you don’t have a food processor, you can mince it with a knife, though this will take a bit longer. Either way, the cauliflower needs to be in tiny pieces.

Mince a clove of garlic and fry over medium heat in a skillet with olive oil. When the garlic has colored, add the washed and drained chickpeas and the minced cauliflower. Fry for 10 minutes, stirring often, until colored. Season with a little salt.

Wash and cut the apple into thin slices. Cut an avocado into cubes or slices.

Combine the cauliflower rice with the chickpeas in a bowl. Arrange the apple and avocado slices and raisins on top.

Tips & Tricks

You can use dried blueberries instead of raisins. Or use both if you prefer.

You might like to accompany the bowl with a refreshing yogurt sauce. Its so easy to make. Put some unsweetened plain yogurt into a bowl. Mince half a clove of garlic and add, and season with a pinch of salt, one tablespoon olive oil, the juice of half a lemon. Mix thoroughly. It’s that easy.
