Chickpea, Kale, and Sweet Potato Bowl

Peel and dice the sweet potato or slice relatively thinly. Wash and chop up the kale.

Fill a pan with plenty of water and bring to a boil over high heat. When the water comes to a boil, add the sweet potato, kale, and a little salt, and cook until the sweet potato and the kale stems and leaves are soft, about 15 minutes. If you buy the kale washed and cut (as often sold at supermarkets), make sure you read the instructions that specify the exact cooking time.

Heat a little olive oil into a large skillet. Drain the chickpeas and rinse under running water. Drain well and add to the skillet. Add your favorite spices or condiments (we added sriracha sauce, but you can use sweet paprika, cumin, curry, turmeric... whatever you like. If you don’t have any spices, mince a garlic clove and lightly fry together with the chickpeas.)

Finally, arrange the sweet potato, kale, and chickpeas in a bowl or dish. It’s really that simple and easy.
Tips & Tricks
We dressed the bowl with a simple yogurt dressing. Want to know how to make it? Mince half a clove of garlic and combine in a bowl with a cup of yogurt, a dash of lemon juice, a pinch of salt and (if you have it and like it) a handful of minced cilantro. Mix well, season with a little pepper, and your dressing is now ready to use.
