Chickpeas and Sweet Potato with Yogurt Dressing

Start by making the dressing. Pour the unsweetened plain yogurt into a bowl. Mince the garlic and add to the yogurt with 1 tablespoon olive oil and season with a pinch of salt. Mix thoroughly. Feel free to add 1 tablespoon lemon juice and a handful of minced cilantro if desired for extra flavor.

Wash the lettuce leaves (you can also use baby lettuce or mixed salad greens) and distribute inside a salad bowl or on a plate. Set aside.

Peel and cut the sweet potato into small dice. Mince the onion. Put a little olive oil in a skillet and lightly fry the sweet potato and onion over medium heat, stirring often.

After 5 minutes, add the chickpeas and season with a little salt. Continue to cook for 5–8 more minutes, stirring regularly. Feel free to season with a few pinches of cumin.

Pour the contents of the skillet over the lettuce. Drizzle over with the yogurt dressing and serve.
Tips & Tricks
You can add a handful of chia seeds as a final flourish.
Feel free to add a handful of minced cilantro and a little lemon juice to the yogurt dressing and a few pinches of ground cumin to the sautéed chickpeas and vegetables. You'll be glad you did.
