Wash the quinoa under water. Put approximately a cup and a half of water into a pot to boil. Once the water starts to boil add the quinoa, a pinch of salt, and cook for approximately 20 minutes or until the seeds open. Remove from the heat, drain, and let it cool.

Wash the lettuce and chop. Also wash and halve the grapes. Grate or finely chop the carrot.

Place the lettuce into a bowl followed by the quinoa, grapes, carrots, and the cooked chickpeas. Mix.

Cut the avocado into small pieces and add to the salad.

Lastly, prepare the vinaigrette for the salad. For this, add oil, honey, mustard, half a clove of garlic, grated ginger, balsamic vinegar, and a pinch of salt into the blender. Blend and then pour over the salad before serving.
