Instructions

Combine 1 cup water with a little salt and 2 tablespoons olive oil in a pan and place over the heat. When the water comes to a boil, add the cup of couscous and turn off the heat. Let stand until the couscous absorbs the liquid. Mix in a handful of raisins and the cashews.

Prepare the other ingredients as follows. Wash and cut the green bell pepper into pieces. Wash and dice the tomatoes. Finally, mince the onion.

Heat a little olive oil in a large skillet and lightly fry the onion and bell pepper over medium heat for a couple of minutes, stirring often.

Add the diced tomato and cook over medium heat for 6–7 minutes. Season with a little salt. If the contents of the skillet look a little dry, you can add a little water, but don’t overdo it.

Serve the couscous in several different bowls and serve the contents of the skillet on a plate or dish so everybody can help themselves.
