Couscous with Ground Meat

Instructions

Combine 1 cup water with a little salt and 3 tablespoons olive oil in a pan and place over the heat. Just before coming to a boil, turn off the heat and add the cup of couscous. Let stand until it the couscous softens, and then stir.

Mince the onion, green bell pepper, and carrots. It will be easier if you use a food processor, if you have one.

Put a little olive oil into a skillet and gently fry the vegetables over medium heat for 5 minutes, stirring from time to time.

Add the ground meat to the skillet and season with a few pinches of salt and, optionally, a little pepper. Use a wooden spoon to mix all the ingredients together and cook for several minutes.

Add the tomato sauce and cook on low-medium heat for 5–7 minutes. Check that the vegetables are juicy, the meat is done, and the seasoning is to your liking. Turn off the heat and serve.

Place the couscous in a tray or on a plate and top with the ground meat and vegetables. It’s really that easy

You can add any vegetables you might have lying around in your fridge to the recipe, like mushrooms, red bell pepper, and/or zucchini.
