Wash or peel the vegetables and cut them into small cubes. Lightly sauté with a tablespoon of oil over medium heat until caramel brown. Then add the salt, pepper, curry, raisins and if you'd like, other spices.

Heat up about 1 cup of water in a pot to boil (you can add half of a cube of vegetable bouillon, if desired). Remove from heat and add the couscous. Let it stand for 5-10 minutes until it is cooked. If necessary, add a bit more hot water.

After, add the couscous to the pan or skillet with the vegetables and sauté it all together. Adjust the salt or spices to your liking, and adding nuts is optional.
