Gently press the tofu to extract any excess water.
Prepare the sauce to marinate the tofu in. Grab a bowl that is slightly larger than the tofu and mix soy sauce, brown sugar, sriracha (if you don't have any, use another hot sauce), a teaspoon of lemon juice, grated garlic cloves, and some grated ginger. Save 2 or 3 tablespoons of this sauce in a bowl to use later.
Cut the tofu into bite sized pieces and let it marinate it in the sauce you've prepared. Try to make it so that all of the tofu marinates equally on all sides, and let it stand in the fridge for 4 hours or all night.
When it's ready to cook, remove the tofu from the marinade and roll in the corn starch.
