Cucumber and Couscous Salad

Instructions

Combine 1 cup water with a little salt and 3 tablespoons olive oil in a pan and place over the heat. Just before the water comes to a boil, add the cup of couscous and turn off the heat. Let stand until the couscous absorbs the liquid. Add a little more salt and oil and stir in, if needed.

While the couscous is hydrating, make the lemon vinaigrette. In a glass, combine the juice of 1/2 lemon, 3 tablespoons olive oil, 2 pinches salt, and the pepper. Whisk well.

Wash the cucumber and slice finely using a peeler or mandoline slicer.

Put the couscous into a salad bowl. Add the cucumber, raisins, and optionally, a little diced feta cheese and chives or red onion, sliced very thinly.

Dress with the lemon vinaigrette you’ve made. The salad is now table-ready. Enjoy!
Tips & Tricks
Don’t hesitate to add feta cheese if you have some in your fridge. It’s a fabulous ingredient because it’s so flavorsome. Use vegan feta cheese if you're doing it dairy-free.
