
Couscous, Mango, and Mint Salad

shrimp

Instructions

Put water to boil with a bit of salt. Before it begins to boil, turn off the heat and add the couscous. Let it stand until it is hydrated and then stir.

Peel and dice the mango and cucumber into medium size cubes.

Wash the mint leaves and chop. Dice the onion.

In a bowl mix the mango and cucumber with the couscous, mint, and onion. Lastly, add the peeled and cooked shrimp.

Dress the salad by adding some olive oil, a drizzle of lemon, and a bit of salt.
Tips & Tricks
The shrimp we used in this recipe were already cooked. The only thing we did was to make sure there weren't any shells.
