Instructions
1
Start by cooking the rice. Put 1 tablespoon olive oil in a pan and heat. Then slice up a garlic clove and add. When the garlic starts to color, add 1 cup rice. Stir for a couple of minutes and then add the water and 1 teaspoon salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a short while, covered with a lid.

Prepare the ingredients. Drain the tuna from their cans. Wash, peel, and dice the mango. Mince the onion. Then wash and cut the cucumber into pieces of the desired size.
3
In a bowl, combine the tuna, mango, onion, and cucumber. Add several tablespoons of rice (the amount you want to eat). Mix everything together. Squeeze the juice from 1 lemon over the dish. Mix again. It’s that easy.
Tips & Tricks
Got any chia seeds? If feel like it, you can toss a generous handful over the salad.
