Curry Rice with Tofu and Vegetables

Peel the onion and dice it into small cubes. Then put it in a pan over medium heat with oil.

Wash the zucchini and the eggplant. Dice into small cubes and when you see that the onion is turning transparent and lightly golden brown, add the eggplant and zucchini into the pan. Add some salt and pepper to taste and when they're ready, add the curry.

Let the vegetables fry with the curry for a couple of minutes before adding the cup of rice and medium-size cubed tofu. Sauté everything for about 2 minutes. Next, add 2 cups of water and if you'd like, some vegetable bouillon to give it more flavor.

Let it absorb the water and cook the rice for about 10 minutes or until it's to your liking. If necessary, add more water. Correct the salt to taste.
