Jumbo Shrimp and Zucchini Rice

Chop 1/2 onion and the garlic cloves. Wash 1/2 zucchini and slice it into rounds.

Peel the jumbo shrimp, making sure there are no remnants of shell, and set aside 3-4 unpeeled for decoration later.

In a large pan add a generous amount of olive oil. When the oil is hot add the chopped garlic and onion and lightly fry over medium-low heat for 6-7 minutes.

Add the peeled shrimp and cook with the garlic and onion for 5 minutes. You can add some salt to the ingredients.

Add the uncooked rice to the pan and fry it all together for a minute.

Add the water and salt to the pan and cook for 12-15 minutes. Then add the sliced zucchini and cook for 6-7 more minutes. While the rice is cooking, if you see that it needs more water, add a little more (just a little, you don't want it soggy). When the rice has been cooking for 20 minutes, check to see that it is fully cooked and salted. Correct if necessary.

Remove from heat and serve. Don't forget to add the cooked unpeeled shrimp to the top of the dish. You can also serve with slices of lemon and a handful of chopped cilantro.
Tips & Tricks
In the recipe we used fresh, raw jumbo shrimp because they have a lot of flavor, but you can also used precooked.
