Put a tablespoon of olive oil in a skillet and heat. Then slice up a garlic clove and add. When the garlic starts to color, add the rice. Stir for a couple of minutes and then add the hot water and a teaspoon of salt. Heat over high heat for 7 minutes and then lower the heat and simmer for another 8 minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand, covered with a cloth.

Prepare the vegetables while the rice is cooking. Wash and peel the carrot. Cut the carrot, zucchini, and onion into small pieces.

Put a little oil into a skillet and fry the vegetables, stirring often. Season with a little salt and cook until a little soft. Remove from the heat.

Once the rice is ready, add to the vegetables and mix in well. Your vegetable rice is now ready. Enjoy!

You can add many other vegetables such as peas, broccoli, diced eggplant...
You can also add any canned corn kernels you might have in your pantry.
