
Cheesy Zucchini Rice

Put a tablespoon of olive oil in a pan and heat. Then slice up one clove of garlic and add. When the garlic starts to brown, add the rice. Stir for a couple of minutes and then add the hot water and a teaspoon of salt. Heat over high heat for 7 minutes and then lower the heat and simmer for another 8 minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand, covered with a cloth.

Meanwhile, wash and grate the zucchini (this gives a better result than cutting).

Put a little oil into a skillet and add the grated zucchini. Season with a few pinches of salt and fry over medium heat for 4–5 minutes, stirring often.

Then add the cooked rice you plan to use together with the grated cheese. Stir well and serve on a plate. Could it get any easier?
Tips & Tricks
Cheddar and Parmesan are great with this dish, but you can use any cheese you have in your fridge.
