Fried Rice with Egg and Vegetables

Add a tablespoon of olive oil to a pot and once it's hot add a sliced garlic clove. Once it begins to color add a cup of rice. Stir for several minutes and add 2 cups of hot water and a teaspoon of salt. Cook on high heat for 7 minutes and then lower the heat and cook on low for 8 more minutes. If at this time the rice has absorbed all the water and is still hard, add more water. Let it stand with the lid on.

Put water to boil in a pot and cook the broccoli (cut into small florets) for barely 3-4 minutes. Drain and set aside.

Chop the garlic on a cutting board along with the pepper and carrots. Cut into small pieces. Add a drizzle of olive oil to a large pan and lightly fry the vegetables you've just cut on medium heat for 8 minutes. Add some salt.

Add the broccoli pieces to the pan with the other vegetables and cook for 2-3 more minutes.

Beat the eggs with a pinch of salt in a small bowl. In another pan add some olive oil and cook the omelet. Once ready, cut the omelet into pieces.

Add the omelet strips to the pan with the rice and mix the ingredients. Leave the pan on the stove for several minutes until the flavors mix.
