Chicken and Broccoli Rice

If you don’t have any cooked rice in your fridge, start by making the rice. To do this, put a tablespoon of olive oil into a pan and heat. Then slice up a garlic clove and add. When the garlic starts to color, add 1 cup rice. Stir for a couple of minutes and then add 2 cups hot water and 1 teaspoon salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a few minutes.

Wash and cut the broccoli into small florets. Fill a large pan with water and add a little salt. Bring to a boil and cook the broccoli for 5 minutes. Turn off the heat and carefully drain.

Put the chicken breast on a cutting board and slice into bite-size pieces. Heat a little olive oil in a skillet and fry the chicken, seasoning with a little salt. When cooked, transfer to a plate and set aside.

Lightly fry the onion in the same skillet. When soft, add the mushrooms, cleaned and sliced, and season with a little salt.

After 2–3 minutes, return the chicken to the skillet with the amount of rice you want to use, and add the broccoli. Stir with a wooden spoon for a couple of minutes. Serve and enjoy!
